Yummy Quiche!

OK - so I've been playing around with a quiche recipe I found in Cuisine at Home and I think I've mastered it down to simplicity. So if you like quiche, give this a try... as you can see I could not even wait to take a picture before I had a bite...









Ingredients:
3/4 c. 2% cottage cheese
9 egg whites (use boxed egg whites, in egg sect.)
3 whole eggs

Filling:
Option 1:
dash olive oil
1/4c. onion, diced
3c. baby spinach
4oz. ham steak ( I buy Cumberland farms diced ham)
1T. chives (or green onions)
1/4 tsp. red pepper flakes
1 Red pepper, sliced into rings
3/4c. cheddar cheese, grated

Option 2:
dash olive oil
1/4c. onion, chopped
1-1/2 c. steamed broccoli
7 slices bacon (pre-baked in oven)
1/4 tsp. red pepper flakes
1 Red pepper, sliced into rings
3/4c. cheddar cheese, grated

Directions:
1. Coat a deep pie dish with cooking spray, place on baking sheet.
2. Puree cottage cheese in blender, add egg whites, and eggs, blend.
3. Saute onion in oil until softened, then add remaining ingredients. Transfer mixture to pie dish.
4. Pour egg mixture into the pie dish over ingredients.
5. Layer red pepper on top, then sprinkle with cheese.
6. Bake for 35-40 minutes, or until filling is set in the center.

Birth of a Blog

So ... why did I do it? I don't have time to clean my house, walk my dog or call my friends and I want to add 'blogger' to the list of things I do? What am I thinking? Well .. a couple of things... first, i wanted to share my struggles tamping down the domestice diva in me, second, wanted to share the solutions and compromises myself and my friends have come to use to save our sanity, third, I need a place to catalog all the great books I've been reading lately and finally.... yes, FINALLY ... I pulled off a stress free family dinner and had to share. I hope that this blog will make you chuckle, provide some fabulous recipes and make you realize that all of us out there are struggling to find the balance in our lives... as they say ... with a little help from my friends.
